  • Black bitter coffee - while you can of course drink your coffee how you like it, it is commonly served in Lebanon thick, rich, black and with no sugar though cardamom is often added

Ingredients - 4 skinless chicken breasts, 2 to 3 cloves of garlic, 1 teaspoon salt, ½ teaspoon pepper, ½ teaspoon Bhar, ¼ cup of lemon juice, ¼ cup of vegetable oil

Instructions

  1. Wash and dry the chicken and cut it into 1-inch cube pieces you can skewer.
  2. Peel the garlic and mash it into a paste with the salt using a chopping board or mortar and pestle.
  3. Add all the spices, the lemon juice and the oil.
  4. Put the chicken in a plastic bag, add in the marinade and mix then leave in the fridge for an hour or overnight.
  5. Skewers the cubes and grill them for 10 to 15 minutes over medium to high heat turning occasionally. The more authentic option is to grill over coals.
  6. Serve with pita, hummus, a parley salad, some olives and french fries.
